I also added an extra half spoon of salt. Spelt is not strictly gluten free but is easier to digest than wheat. Spelt bread also tends to dry out a bit faster than wheat bread, so the hydration of this dough is a bit higher in order to compensate. Turn out on a work surface, knock back and knead for a few minutes. Spelt naturally proves and rises more quickly than conventional wheat flour, so bake it as soon as it has doubled in size after its second proving. Good stuff.
